i.e. use what you have in your kitchen!
It is so trixy to get a cookie just right. But here it is.
For these cookies, the trixiest it gets is separating 1 egg so that you use the yolk alone. Here's the recipe!
Ingredients:
1 1/2 sticks butter or vegan butter sub
225g or 1 1/2 cups soft brown sugar
1 tbsp vanilla extract
1 egg
1 egg yolk
300g or 2 1/2 cups AP flour
1/2 tsp bicarb/baking soda
325g (a whole pack of 'stuff' if you're buying choc chips etc) of 'filling'
Method:
Melt the butter or have it super soft.
Mix butter with sugar either in melting pan or mixer until light and creamy
add vanilla and eggs and mix to combine
add in flour and bicarb/baking soda - no need to sift here
add chosen filling, e.g. white choc and cranberry, straight up choc, or mixture of nuts - you know what you like
scoop using 1/4 cup or ice cream scoop measurement - mixture should yield approximately 24 cookies of this size
bake at 375 F for 10 mins if like a browned cookie that's chewy OR 350 F for 15 mins if you like it pale and soft
Leave to cool before eating...if you can!
