Chicken Kebab

ALL these # and more with this delicious recipe I have tweaked from the 2 boys tagged above. THIS recipe however involves no extra fat than the lean ingredients and spices thrown in, so quite literally: winner, winner - chicken dinner (or lunch, breakfast, post pub grub, whatever :))


Serves 4


Ingredients:


Kebab

  • 1 pack (approx. 1 lb/450g) chicken/turkey mince aka ground chicken/turkey

  • 1 onion - half for the kebab, half for the salad

  • 2 garlic cloves (or to taste)

  • 1 tsp salt

  • 1 tsp paprika

  • 1 tsp coriander

  • 1/2 tsp cumin

  • 1/2 tsp chili or cayenne pepper

  • 1/2 tsp turmeric

  • black pepper to taste

  • lettuce of choice

  • fresh coriander

  • any veg you like e.g. tomatoes, pickled veg, etc

Sauces and Servings


to keep this 'free' on #SlimmingWorld plan or whatever regime you follow, then use fat free Greek yoghurt with 1 garlic clove grated in.


hot sauce is also free, so shake away!


IF you want to add in some 'syns' or whatever you call it, then a tbsp of tahini per person, or mayo is a great addition


Serve with rice to keep it all 100% free, or use one of your carbs and grab a wrap or pitta.

I use keto wraps from Sam's club - they're only 50 kcal so I don't count them, as it would be about 2.5 syns.


Method

  1. add all spices to meat. I do it directly in the package or transfer to a shall bowl you can cover

  2. cut your onion in half. grate ONE half of the onion (you're saving the other half of the onion for your salad) plus your garlic cloves directly over the meat. this adds all the delicious juices and moisture from the veggies. it helps flavour and tenderize the meat.

  3. stir thoroughly and cover the pot OR transfer to a pot so you can cover if you mixed it up in the packaging.

  4. let this marinade for as long as you can.

  5. whilst meat is marinating, prepare your onion. the half you have left needs to be sliced finely into strips. then, put in to a pot, cover with cold water and cover the pot. leave in fridge whilst meat marinates.

  6. AFTER meat has marinaded, preheat your oven to 180 C / 350 F. prepare a baking sheet with foil or parchment. use a large serving spoon, split meat in to 4 dollops and smear over the baking sheet into 4 clear patties, 5 mm in depth, as wide as they go. leave each patty distinct. you could of course leave whole, pushing into one giant patty 5mm in depth. you can then serve in slices.

  7. bake for 30 minutes

  8. slice or serve whole with your chosen sides and sauces.

IF you have leftovers, fry in a nonstick pan to reheat. No oil is needed here.
